Nopalitos and Huevos Rancheros

Ingredients:
Prickly pear pads (1 small pad per person)
Eggs
Butter
Salt and pepper
Picante sauce


Preparation:
After preparing the nopalitos, saute them in butter. Fry your eggs, sunny-side up, with salt
and pepper to taste. Serve the eggs topped with picante sauce, the nopalitos on the side. Or saute
the nopalitos with chopped onions and tomatoes, simmering them until well cookeed. Then stir in
beaten eggs, and cook as you would scrambled eggs or an omelet. Nopalitos taste pleasantly sour and
contain generous amounts of vitamin A and calcium. The interior of the pad is mucilaginous, yielding
a slippery vegetable that's a bit difficult to get hold of with a fork. Try eating your huevos
rancheros Mexican style, scooping them up with a tortilla or a piece of bread.
