Dracula's Delight - Prickly Pear Sauce

Ingredients:
1 cup prickly pear pulp, seeds removed
1/4 cup liquid sweetener
2 tablespoons lemon juice
1 tablespoon tapioca
1 tablespoon vegetable oil
Pinch of salt


Preparation:
The color of the sauce holds the reason for its name. You can use this over many desserts, or pour on
fruit salads and pancakes.

Puree the fruit in a blender or food processor. Cook all the ingredients together over medium-high
heat, stirring constantly, until it reaches a boil. Reduce the heat and simmer, stirring constantly, for 5 to 10 minutes. Serve hot or cold.
